Baked sweet potato with greens


Baked sweet potatoes (or yams) are a great vessel for healthy ingredients. In this case, I stuffed the baked yam with sauteed shallots and kale, pesto and parmesan.


Bake the yam or sweet potato for 45 minutes at 425 degrees. Split open, stuff with sauteed kale and shallots, and top with pesto and parmesan.
